The Most Delicious Paleo Brownies You'll Ever Make

You guys know I love to bake, but I’ve never tried my hand at baking brownies. Luke mentioned brownies sounded good last week so I browsed around some recipes and found a classic brownie recipe which happened to be paleo. A win in my head. It sounded perfect, and I already had all the ingredients at home. It even claimed to get that infamous thin crispy layer on the top just like brownies do….at this point how could I NOT make them? And just to be clear, if you guys make these scrumptious little squares of joy you have to call them by their name: The Most Delicious Paleo Brownies You’ll Ever Make. You’re welcome.

Here’s the breakdown: modified from @kaylieshealthyrecipes

3/4 cup organic almond butter

2/3 cup coconut sugar

1 cup organic almond flour

1 egg

2 tsp. vanilla extract

1/3 cup pumpkin puree

1/4 tsp. salt

Dark chocolate chips (use at least 70% cacao to reap the benefits ya feel me)

I tweaked the recipe after making the first batch by adding coconut flakes on top and a teeny bit more almond butter. **you don’t have to do this, I just love my brownies like I love my women: thiccc. I also used pumpkin puree instead of sweet potato and you can’t taste it at all. It really makes the texture moist and smooth.

Combine all ingredients in a medium mixing bowl until smooth, then fold in chocolate chips to taste (I used almost 1/2 a cup. Line a 8”x 5” baking dish or 8”x 8” dish with parchment paper and pour that heavenly smelling batter right in. Bake on 350 degrees for 25 minutes and then your life is complete. Enjoy fresh out the oven or freeze them like I do. These brownies taste even better after being in the freezer I can’t even understand it.
