Taco Night In: A Few of my Favorite Dishes
Luke asked me the other day what my favorite food was and I said tacos. If he’d asked me that last year, I don’t even know what I’d say because I am the least picky person I know- so it was probably a number of things. After bartending at a taco + tequila bar, I’ve gained this new found respect and affinity for authentic corn tortilla tacos and good tequila. In this post I’ll share with you a few of my go-to recipes to recreate those amazing taco nights out! They’re healthy, savory and easy to whip up. I hope you enjoy!
My Famous Guacamole Recipe: (serves 3-4 people)
3 large avocados
1/2 tsp. turmeric
1/4 cup diced red onion
Juice from half of a large lime
1 1/2 tbsp. cilantro
1/4 tsp. pink salt
Dash of cayenne pepper
Top secret Trader Joe’s taco seasoning (about 1 tbsp.)
Tangy Mango Salsa: (serves 3-4 people/3 cups)
I originally got this recipe from @rachaelsgoodeats on IG and tweaked it just a tad.
1 whole mango, diced
1 medium organic red bell pepper
2/3 cup finely diced cucumber
1 medium jalapeño, finely diced
Juice of two small limes
1/4 cup diced red onion
1/2 cup packed fresh cilantro, finely chopped
1/2 tsp. sea salt
1/4 tsp cayenne pepper
Combine all ingredients in medium mixing bowl. Lasts for about 5 days in the refrigerator!
Grouper Fish Tacos: (serves 2-3 people)
Grilled grouper is the best in tacos, but we don’t have a grill so we baked it for about 12-13 minutes on 400 degrees in the oven. If you do have a grill, grill at 400-425 for about 4-5 minutes on each side. Add a drizzle of olive oil, salt + pepper and cumin before cooking and finish off with a squeeze of lime juice. Once fish is cooked, I throw some authentic corn tortillas in the oven with a drizzle of avocado oil for about 4 minutes at 200 degrees just to warm them up a bit. I get these from La Tortilla Factory and they are super clean with only organic stone ground corn, water and salt. They are so good! Of course I top everything with Goya Salsa Picante, so if you have that on hand, were already best friends.
Killer Margarita: (serves 2)
If you know me you know I can’t stand a margarita that’s made with sour mix. It’s so bland and so flavorless and really takes away any of the taste of wonderful tequila. I will admit, I like buying Tres Agaves Organic Margarita Mix which is just lime and organic agave because it takes all the work out. All you have to do is add 2 oz. of tequila to 3 oz. of the mix! Shake with ice, taste and adjust to your liking. Add a fresh lime wedge for garnish and salt that rim if that’s how you drink your marg, I love a salted rim! We love Casamigos Reposado but a cheap Hornitos Silver will suffice too.
